This recipe comes from a fantastic Dutch chef, Yvette van Boven. It is perfect as a side to almost every dish; from fish or meat to grilled vegetables, like we made that day.
Ingredients (4 pers):
150 gr couscous
1,5 dl vegetable stock
1 red onion, finely sliced in rings
1 tbsp olive oil
1/4 tsp salt
1/4 tsp ground cumin
50 gr unsalted pistachios, chopped and lightely toasted
3 scallions, finely sliced in rings
1 fresh green jalapeno, finely sliced in rings
30 gr aragula
For the herb paste:
20 gr parsley
20 gr cilantro
2 tbsp chopped dragon
2 tbsp chopped dill
2 tbsp chopped fresh mint
1 dl olive oil
Put the couscous in a big bowl and pour over the boiling stock. Cover the bowl with plastic wrap and let it sit there for about 10 minutes.
In the meantime fry the onion in a skillet over medium-heat, in some olive oil, until ready and browned. Mix in the cumin and salt, let it cool a bit.
Put all the ingredients for the herb paste in a blender and puree till it is a nice even paste. Mix this paste into the couscous and work it with a fork to get the couscous a bit more fluffy. Add in the fried onion, pistachios, scallions, jalapeno and aragula and stir everything loosely. Serve at room temperature.
